It’s Not Just Stew – This Recipe Could Keep Your Mind Sharp for Life!

What if dinner could nourish not just your body but also your mind? Dr. Jonathan J. Rasouli, a board-certified spinal neurosurgeon at Northwell Health in New York, believes his mom’s cooking does just that. Her secret? A traditional Persian herb stew called Ghormeh Sabzi, which combines simple, wholesome ingredients to support brain health and prevent memory-related issues.

“This dish is one of my personal favorites, and my mom makes it the best!” Rasouli shared.

Why Ghormeh Sabzi Is a Brain-Boosting Powerhouse

Ghormeh Sabzi isn’t just delicious; it’s packed with ingredients that offer significant cognitive benefits. According to Rasouli, the combination of grass-fed beef, turmeric, and fresh herbs makes this stew a nutritional powerhouse.

“Turmeric produces curcumin, which studies have shown reduces inflammation — and can, in turn, improve memory and slow the development of amyloid plaques, a hallmark of Alzheimer’s disease,” he explained.

Additionally, the stew includes fenugreek, a herb rich in antioxidants that combat oxidative stress—a condition often linked to symptoms like memory loss and brain fog. Persian limes, another key ingredient, deliver a dose of vitamin C and phytonutrients that further reduce oxidative stress. Rounding out the brain-friendly profile are kidney beans, providing plant-based protein and fiber to enhance overall brain health.

Cooking With Purpose: A Simple Recipe That Delivers

For Rasouli, Ghormeh Sabzi isn’t just food—it’s medicine disguised as comfort. It’s also proof that brain-healthy meals don’t have to be complicated. With a few fresh ingredients and simple steps, anyone can make this dish a staple in their diet.

Here’s the recipe, passed down from Rasouli’s mother:

Ingredients:

  • 1 lb grass-fed stew beef (rich in omega-3s, iron, and vitamin B12)
  • 1 large diced onion
  • 1 bunch fresh parsley, chopped
  • 1 bunch fresh cilantro, chopped
  • ½ bunch fresh fenugreek, chopped
  • ½ cup kidney beans (soaked overnight for fiber)
  • 1 tsp turmeric powder (anti-inflammatory properties)
  • 3-4 dried Persian limes (antioxidants and tangy flavor)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Directions:

  1. In a large pot, heat olive oil over medium heat and sauté the onions until golden. Add the beef and turmeric, cooking until the meat browns.
  2. Add the parsley, cilantro, and fenugreek to the pot. Sauté the herbs with the beef for 5-7 minutes until fragrant.
  3. Stir in the soaked kidney beans and add water to cover the ingredients. Bring the mixture to a boil, then reduce the heat to simmer.
  4. Pierce the dried Persian limes with a fork and add them to the stew. Cover and let simmer for 2-3 hours, stirring occasionally, until the meat and beans are tender.
  5. Season with salt and pepper to taste. Serve with saffron-infused basmati rice for a hearty, brain-healthy meal.

A Recipe That’s Good for the Soul—and the Brain

Rasouli’s passion for his mother’s Ghormeh Sabzi is a testament to the power of home-cooked meals that nurture both the body and mind. In a world of processed food, this Persian herb stew stands out as a simple, wholesome reminder that eating well doesn’t have to be complicated.

“This dish is proof that sometimes, the smartest choice is also the most delicious,” Rasouli said.

So why not try this brain-boosting recipe? It might just become your new favorite comfort food—and a healthy habit for years to come.
